Small booths offered various products ranging from honey to smoked wild boar, and all entrepreneurs shared the same mission: to spread the agenda of local, environmentally friendly and most important of all, a <em>slow<\/em>, patiently produced food.<\/p>\n<p>\u201cThe taste of honey is sweet \u2013 the actual job producing it, not always so sweet\u201d said <strong>Anja Ollikainen, <\/strong>a beekeeper from Karjalohja. The honey production demands hard physical work, and most of all, patience. Ollikainen has 15 honey producing beehives, but there have been some serious drawbacks during the years: \u201cPesticides used by other farmers killed almost all of my bees\u201d, Ollikainen said, and emphasized the ecological importance of sustainable food production \u2013 the ecological role of bees as pollinators is vital to the food production of all mankind.<\/p>\n<figure id=\"attachment_168639\" aria-describedby=\"caption-attachment-168639\" style=\"width: 196px\" class=\"wp-caption alignnone\"><a href=\"https:\/\/www.stoori.fi\/\/data\/wordpress\/htdocs\/wp-content\/uploads\/2019\/10\/beekeeper.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"size-medium wp-image-168639\" src=\"https:\/\/www.stoori.fi\/\/data\/wordpress\/htdocs\/wp-content\/uploads\/2019\/10\/beekeeper-196x300.jpg\" alt=\"\" width=\"196\" height=\"300\"><\/a><figcaption id=\"caption-attachment-168639\" class=\"wp-caption-text\">Beekeeper Anja Ollikainen demonstrating protective beekeeping headwear.<\/figcaption><\/figure>\n<figure id=\"attachment_168640\" aria-describedby=\"caption-attachment-168640\" style=\"width: 300px\" class=\"wp-caption alignnone\"><a href=\"https:\/\/www.stoori.fi\/\/data\/wordpress\/htdocs\/wp-content\/uploads\/2019\/10\/hunaja_tuotteet.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"size-medium wp-image-168640\" src=\"https:\/\/www.stoori.fi\/\/data\/wordpress\/htdocs\/wp-content\/uploads\/2019\/10\/hunaja_tuotteet-300x149.jpg\" alt=\"\" width=\"300\" height=\"149\"><\/a><figcaption id=\"caption-attachment-168640\" class=\"wp-caption-text\">Beekeeper can produce many variations of honey by mixing different ingredients with the fresh honey.<\/figcaption><\/figure>\n<p>Ollikainen sells several kinds of honey: the taste profile of a certain honey depends on the flowers and what kind of nectar they produce. Ollikainen has done beekeeping for five years, and in the beginning, she had only one nest. \u201cI started this as a hobby\u201d, she says \u201cand work can be tough at times\u201d, Ollikainen tells us as she demonstrates the use of a protective suit all beekeepers use; basically, a body armour.<\/p>\n<p>Ollikainen is not familiar with the concept of slow food \u2013 but she is passionate about the ecological importance of the welfare of bees, as the bee populations all over the world have been declining in a rather alarming way \u2013 mostly due to pesticides.<\/p>\n<p>Small scale brewing could be considered as slow food, or even as an outdoor food producing, in a way: the former chef and a current brewer master <strong>Jari Leinonen <\/strong>from the <strong>Fiskarsin Panimo <\/strong>certainly thinks so. \u201cWe participate in all kinds of festivals around the country in the summertime\u201d, he says, as he pours a pint of \u201cMets\u00e4n Henki\u201d- beer: a recipe of his own. Leinonen enjoys the freedom the low scale business with his friends \u2013 there are five employees \u2013 but the work can sometimes be quite hard. Like Ollikainen, Leinonen started his brewing career as a hobby and it \u201cjust grew\u201d, as he says. \u201cMets\u00e4n henki\u201d has a strong juniperish flavour, a touch of hops, and yet a soothing, soft flavour.<\/p>\n<figure id=\"attachment_168642\" aria-describedby=\"caption-attachment-168642\" style=\"width: 300px\" class=\"wp-caption alignnone\"><a href=\"https:\/\/www.stoori.fi\/\/data\/wordpress\/htdocs\/wp-content\/uploads\/2019\/10\/panimo_fiskars.jpeg\"><img loading=\"lazy\" decoding=\"async\" class=\"size-medium wp-image-168642\" src=\"https:\/\/www.stoori.fi\/\/data\/wordpress\/htdocs\/wp-content\/uploads\/2019\/10\/panimo_fiskars-300x202.jpeg\" alt=\"\" width=\"300\" height=\"202\"><\/a><figcaption id=\"caption-attachment-168642\" class=\"wp-caption-text\">Headmaster Jari Leinonen serving a customer with a fresh pint of \u201cMets\u00e4n Henki\u201d \u2013 beer.<\/figcaption><\/figure>\n<p>Most of the food sellers were too busy to be interviewed by us, but the flavours and scents of the festival lingered a long time in our minds, even hours after the event. We managed to briefly interview a juice maker N.N. (he wanted to be anonymous) from the \u201c<strong>Kullas G\u00e5rd<\/strong>\u201d company.
